The Taco Tuesday framework is simple. You need:
A lot of Margarita Mix
Store bought flour and corn tortillas
Store bought Doritos Taco shells for the kids
Store bought tortilla chips
A batch of Basic Salsa
A batch of Queso Velveto
Some protein options like Braised Pork Shoulder or Seared Chicken Thighs.
Some good toppings like Quick Pickled Onions, canned corn, shredded lettuce, shredded cheese, crema
The plan is:
Have some protein on hand. Don't try and make it on Tuesday. Batch prep something over the weekend. Remember that some of your kids don't like Braised Pork Shoulder so make sure to have some Seared Chicken Thighs too.
Same goes for the Margarita Mix. Make it in bulk on the weekend and have it in the freezer.
Similarly, prepare some Quick Pickled Onions ahead of time. They are a great topping.
Make Basic Salsa and Queso Velveto the day before. Reheat on Tuesday before filling the tacos and keep warm.
Fill tacos with meat and cheese and bake in a low temperature oven until the cheese is melted.
Add any remaining toppings.
