Quick Pickled Onions

Ingredients

  • Thinly sliced red onions

  • White vinegar

  • Water

  • Salt

Instructions

  • Put the onions in an airtight glass jar.

  • Mix equal parts water and vinegar (enough to cover the onions) with a big pinch of salt.

  • Bring your mixture to a boil

  • Pour boiling brine over the onions.

  • Store in the refrigerator and wait at least 2 hours before use. These last in the fridge for about 3 weeks.
